- Quail eggs - 5 pieces
 - Olive oil - 250 ml
 - Lemon juice - 2 tbsp.l .
 - Mustard - 1 tsp.

 - Salt (without slide) – 1 tsp.
 - Parsley (for decoration) – twig
 
Step-by-step cooking recipe
Break the quail eggs into a deep bowl.
Add salt, sugar and whisk with a blender for 2-3 minutes.
Continuing to beat, add mustard and lemon juice.
After 3 minutes, pour in a thin stream of olive oil. Beat until the mixture thickens. It usually takes about a minute.
Put the mayonnaise in a saucepan and garnish with a parsley leaf.
