In a thick-walled frying pan, melt the butter.
Pour in the sifted flour and mix well with a whisk.
Without stopping stirring, fry the resulting mass for 1.5 minutes.
Pour warm milk in small portions. Stir until smooth.
Add salt, sprinkle with nutmeg and pour in warm cream.
Stirring continuously, warm the sauce for 2-3 minutes on low heat until thickened. Strain the finished sauce through a sieve.
