Bring vegetable broth or water to a boil, add chopped potatoes and cook for 15-20 minutes. Add spices if desired.
Chop the onion, carrot and celery. Fry in olive oil until soft and send to the potatoes.
Boil for another 5 minutes and add finely chopped sorrel, herbs and spices.
Bring the green borscht to a boil and remove from the heat.
