
Pumpkin dishes in winter are not only a gastronomic pleasure, but also the salvation of your mood. Its bright sunny color pleases and warms with its appearance alone. Most often, sweet preparations are made from pumpkin, but I have another option.
Ingredients
- Pumpkin - 600 g
- Water - 500 ml
- Vinegar (9%) – 20 ml
- Sugar - 30 g
- Salt - 20 g
- Carnation - 3 pieces
- Ground ginger - 1 pinch
- Nutmeg - 1 pinch
- Allspice (polka dots) – 3 pieces
- Black Pepper (polka dots) – 6 pieces
- Hot red pepper - 0.5 pods
- Parsley - 4 twigs
- Lemon - 30 g
- Olives - a couple of pieces
Step-by-step cooking recipe
Cut the pumpkin into 5-6 mm cubes, fill with water and bring to a boil.
Add salt and vinegar, boil for a couple of minutes and leave the pumpkin to infuse overnight.
After that, put it in a colander, and add sugar and all the spices to the marinade. Boil until the sugar dissolves.
Put pumpkin, chopped hot pepper, lemon slices and a couple of olives in sterilized jars for beauty.
Pour boiling marinade over everything and roll it up immediately.
