It so happened that tinctures and decoctions are most often prepared from mountain ash. In cooking, these berries are rarely used. I propose to correct the situation and do compote from red mountain ash. It can be drunk immediately or closed for the winter.
Ingredients
- Mountain Ash (red) – 1 kg
 - Sugar - 600 g
 - Citric acid - on the tip of the knife
 - Water (filtered) – 3 l
 
Step-by-step cooking recipe
Remove the rowan from the garbage and rinse under running water.
Arrange the berries in clean jars, filling no more than two-thirds.
Pour boiling water to the top, cover with lids and leave for 25-30 minutes.
Drain the water into a saucepan, add sugar and boil for 3-4 minutes.
Pour citric acid into jars with rowan and pour boiling syrup.
Roll up, turn upside down and wrap up for a day with a warm blanket.
