A similar recipe was used by the chefs of Catherine the Second. Emerald gooseberry jam with cherry leaves was a favorite delicacy of the Empress. It is not difficult to cook it at home. I tell you the recipe in detail.
Ingredients
- Gooseberry (green) – 1 kg
- Cherry leaves - 50 g
- Sugar - 600 g
- Water - 250 ml
Step-by-step cooking recipe
Fill the cherry leaves with water, boil for 5 minutes and cool.
Strain the resulting broth through a double layer of gauze.
Put the gooseberries in a saucepan, pour the broth and leave to soak for 8 hours.
Pour the syrup into a separate bowl, add sugar and boil for 5 minutes.
Add the gooseberries and cook for 15 minutes on low heat.
Arrange the jam in clean, dry jars, roll it up and wrap it with a thick towel for a day.
