Aivar in Serbian with eggplant for winter

Serbian aivar is a variation of vegetable caviar, which is so popular with many since childhood. It is slightly different in the choice of ingredients and the specifics of cooking, but do not worry – I will tell you in detail about everything further in the recipe.
Ingredients
- Bell pepper - 1 kg
- Eggplant - 500 g
- Garlic - 50 g
- Sugar - 1 tbsp.l .
- Salt - 1 tsp.
- Spices and seasonings - 1 tbsp.l.
- Vegetable oil - 50 ml
- Vinegar - 50 ml
Step-by-step cooking recipe
Bake eggplants and peppers in the oven at 200 degrees until scorched - about 30-40 minutes.

Wrap the vegetables in a bag, leave for half an hour and then peel off the skin.

Chop them with a blender with garlic.

Add butter, sugar, salt and spices, and boil the aivar over low heat to the desired density. Pour in the vinegar and roll the ivar into sterile jars.
