And what about this original mushroom soup-puree of fragrant red chanterelles? I advise you to postpone cooking and separately fry a handful of mushrooms for decoration. And, of course, add your favorite herbs and spices.

- Potatoes - 2 pieces
 - Chanterelles - 500 g
 - Onion - 1 piece
 - Garlic - 2 cloves
 - Butter - 30 g
 - Chicken broth - 400 ml
 - Cream (20%) – 150 ml
 - Vegetable oil - 1 art.l.
 
Step-by-step cooking recipe
Thinly slice the potatoes and chop the onion. Wash the chanterelles thoroughly and cut them too.
Fry the potatoes in a mixture of oils for a couple of minutes, add the onion and garlic and fry for another 2-3 minutes.
Add chanterelles and continue frying for another 5 minutes.
Pour in the broth, bring the soup to a boil and cook for about 10 minutes over high heat.
Chop everything with a blender and add warm cream to taste.
