In this recipe I will tell you how to cook a popular bento cake without using cottage cheese. This variation of the cake will definitely appeal to fans of the classic honey cake, and the delicate sour cream filigree will complement the taste of cakes and give a feeling of lightness
Ingredients
- Flour - 400 g
- Sugar - 150 g
- Chicken eggs - 2 pcs.
- Butter - 80 g
- Honey - 120 g
- Baking soda - 1,5 tsp.
- Ground cinnamon - 2 tsp.
- Orange (zest) – 1 pcs.
- Cream (33-35%) – 200 ml
- Sour cream (25%) – 300 ml
- Powdered sugar - 60 g
Step-by-step cooking recipe
Combine honey, eggs, sugar, butter and orange zest. Stirring constantly, bring the mass to homogeneity over low heat (sugar and butter should completely dissolve), remove from heat.

Add soda to the hot mass immediately, mix. The mixture will lighten and increase in volume.

Mix the sifted flour with cinnamon, gradually add to the liquid mass. Mix until smooth, knead an elastic, non-sticky dough, cover it with cling film and send it to the refrigerator for 30 minutes.

When the dough is infused, roll it into a layer 2-3 mm thick and use a metal ring or other round shape to cut out circles with a diameter of 10 cm.

Bake the cakes on a parchment-lined baking sheet in a preheated 200 °C oven until golden brown, about 5 minutes.

Prepare the cream: combine cream, sour cream and powdered sugar, mix, beat with a mixer until a thick fluffy mass is formed.

Assemble the cakes, alternately smearing the cakes with cream. From the specified number of products, I get 2-3 ready-made bento cakes consisting of 3 cakes. Decorate the cakes at your discretion.
